Are you able to otherwise do that last rename, via the File Explorer?

Other than that, I'm sorry, but I don't have any other suggestions. I
am equally mystified that running it as Administrator doesn't give
enough permissions, but I haven't used Windows regularly in a long
time.

I tried to place some Printlns in the init.go (to isolate) and tried to hit
"gomobile init". But my changes are not getting into effect. Please help.

You will have to re-run
go install golang.org/x/mobile/cmd/gomobile
for your changes to the gomobile source code to take effect. It might
help to add the -v flag to verify that a new version is installed when
you expect one to be:
go install -v golang.org/x/mobile/cmd/gomobile
