FAQ
I chose the embedded database install, and accepted all other defaults. It
gives an error at the point of creating database tables:

'Creating Hive Metastore Database Tables
  Details

Couldn't find process information.'
Command failed to run because service hive1 has invalid configuration. Review and correct its configuration. First error: 'Hive Metastore Database Host' is required when using database type 'postgresql'

The hive_metastore_database_host is blank when I go to check the configuration. If I set it to localhost, I get an error starting the service:
'Service did not start successfully; not all of the required roles started: Hive service hive1 must have at least one healthy, running Hive Metastore Server'
I have tried changing hive_metastore_database_host to the fqdn of the cloudera server, but I get the same error.

Any idea what is wrong here?

After changing the host to the fqdn, did you re-run the create tables
    command?
What is the error when starting hive metastore server?

If you are using the AWS installer and are on a VPN, you can sometimes hit
problems when we try to resolve the hostname, which can result in Hive
failing to populate its hostname correctly (it is empty). It should be the
fqdn of the cloudera manager server. You can check if this happened to you
by inspecting /etc/cloudera-scm-server/db.mgmt.properties. If that file has
no host names, then you have hit this problem and should edit that file to
populate the host names and restart cloudera manager.

    Thanks,
    Darren
