Use mock (which is in CentOS extras repository).

I just have a small shell script wrapper around mock. If you need to
build on a larger scale, you could take a look at plague. If you just
need to build two or three packages a day, use a shell script :)

Upstream issue since 5.0 -
<https://bugzilla.redhat.com/show_bug.cgi?id=250403> has more
information.

For now do a yum --exclude=nautilus-sendto groupinstall "GNOME Desktop Environment"

This will hopefully be fixed in 5.3
